pestos | Pink Salt Shed

Using the best ingredients we can find, and always trying to find better... the pesto we make is super tasty. You can feel happy that I'm trying to look after you just as much as you are. Just the basic ingredients in every jar with a pinch of Himalayan pink salt to bring out the flavour.

Go to the recipes page to find out what you can do with this glorious artisan fresh pesto... a real noteworthy point is that it can be frozen... yep! If you don't use it all (how can this happen) then decant into a covered ice cube tray or a, airtight container, it'll last a good 2-3 months (always thaw in the fridge).

toasted pine nuts

pan fried to release their natural oils and to turn a little of the kernel brown. an earthy nutty flavour that's perfect with parmesan reggiano

wild rocket

not the rocket that flies you to the moon, but the peppery aromatic green leaf that packs a punch in a jar of pesto, dollop one or spoon straight in...

extra virgin olive oil

this clean oil that our bodies love, binds all of the pesto into the amazing consistency to just spoon from the jar into our mouth!

red chilli

this medium heat beauty packs a punch when you add some of the pith, it's not the seeds that hold the heat but the pith, who knew! we use all of the chilli, pith, seeds & all as we believe in minimal food waste, who wants to eat the stalk anyway!

himalayan pink salt

with so many more health benefits than white salt or table salt. this salt is subtle and clean, enhancing the flavour of all other ingredients

coriander

fresh & fragrant, this distinct herb goes perfectly with cashew nuts instead of pine nuts, a classic combination

organic cashew nuts

another organic ingredient... creamy & soft they still add a bite to any pesto. often combined with pine nuts but I think it's one or the other...

tomatoes, pureed

tomato puree adds depth to the red chilli pesto, a rich flavour that matches the zing of the chilli

'purest green' basil pesto

a pot of gorgeousness, waiting to be spooned straight in to the cake hole!

cloves of garlic

I use the freshest garlic, it's amazing and just the right amount makes the pesto sing

green peas

the freshness of a pea, so sweet... these lovely green things are fabulous when whizzed with mint. amazing on a salad or in a risotto!

mint leaves

Fresh and powerful, this herb brings a light and perfect marriage for a bowl of peas, or jar of peas!

organic sun-dried tomatoes

not all ingredients I use are organic, but these beauties are. they are fabulous and rich with the pesto and to spread or dollop this on your fave dish will pimp the flavour to the next level!

fresh beetroot

the colour of beetroot is amazing and it lends itself to looking fabulous in pesto, to dip in to or mix through a bowl of pasta or have with a jacket potato, nothing's out of bounds!

walnuts

these earthy nuts bring a musky tone to the beetroot and chestnut mushroom pestos. A great summer dip or autumnal comfort food.

sunflower seeds

imagine if I planted all of these! Some people are allergic to nuts and often this extent to the 'not nut' pine nut as well, so we've come up with a 'nut free' pesto, just basil at the moment... toasted by us as well, the wonderful full flavour is released.

sage

a little goes a long way and a hint of this velvet like herb elevates the chestnut mushrooms and walnuts to an earthy grounding that's so tasty.

feta

crumbly soft cheese that adds a tangy edge to the pesto, fresh as well so light to not overpower the earthy beetroot & walnuts.
